Jimboy's Tacos celebrates 70 years with taco-eating contest

Jimboy's Tacos CEO tells Mark S. Allen how a kitchen accident led to the company's signature dish.

FOLSOM, Calif — Jimboy's Tacos is celebrating 70 years of business with a 7-taco speed eating contest featuring ABC10's own Mark S. Allen, Folsom Fire Chief Ken Cusano, Folsom Mayor Mike Kozlowski, and many other media personalities from the Sacramento region.

HERE ARE 3 THINGS TO KNOW: 

  1. Jim "Jimboy" Knudson founded Jimboy's Tacos in a small trailer on Kings Beach in Lake Tahoe back in 1954. Since then, Jimboy's Tacos has been family-owned and operated, with more than 40 locations in Nevada and Northern California.

  2. The signature item at Jimboy's Tacos is the Original Ground Beef Taco, which is dusted with parmesan cheese. But how did that come about? According to the grandson of Jim Knudson and current CEO of Jimboy's, Erik Freeman told Mark on the ABC10 Morning News that it was an accident. Freeman said that while his grandfather was cooking, he had knocked over parmesan cheese right into the now-iconic dish.

    "It was an accident that came from spices up on the cabinet," Freeman said. "Spilled all over the taco and the rest is history."

  3. The 70th anniversary eating contest will feature multiple Sacramento-based media personalities, including Mark S. Allen, and the Erik Freeman, the CEO of Jimboy's Tacos. The winner will have a donation made out to the charity of their choice. The contest can be watched on Mark S Allen's Facebook page at 2:30 p.m. on Wednesday.
