FOLSOM, Calif. — A new Folsom restaurant created by two Michelin-rated chefs previously slated to open in January is now aiming for a May opening date.
Cantina Pedregal, a Mexican restaurant at 185 Placerville Road #150, looks to open in May because restaurant owners decided to build a covered outdoor patio, which was not in the original construction plan, according to owner Clay Nutting.
“While it added to our timeline, we believe the covered patio will add significant benefit to the restaurant by providing comfortable outdoor dining year round,” Nutting said.
The restaurant is a collaboration between Patricio Wise of Roseville's Nixtaco and Brad Cecchi of Canon | East Sacramento.
Nixtaco earned Michelin Bib Gourmand status in 2021; Canon earned it in 2019.
Wise said in November 2023 the menu is still being developed, but visitors can expect fire-roasted ribeye, chicken, octopus, vegetables to share, house-made tortillas, small plates and more.
He said Folsom was chosen because of the people moving to the area.
"Pedregal is not just a Mexican restaurant,” Wise said. “We’re striving to create a neighborhood gathering place that has an elevated menu and an exciting bar program.”
The restaurant is named after a subdivision in Northern Mexico where Wise grew up and translated to English means “a field covered by rocks.”
"My wife and I grew up in Monterrey, Mexico, where cantinas are casual places to spend time with friends and family…” Wise said. “The ambiance is always warm and convivial and that is the feeling that will carry over into Pedregal.”
Nutting said he plans on the restaurant being open for lunch and dinner, but firm hours have not been set.
“We anticipate hiring 20 to 30 employees, most of which we hope to come from Folsom,” he said.
