New Italian restaurant offering fresh pasta opens in Granite Bay

Italian for seven, the restaurant's namesake comes from the number of main dishes on the menu.

GRANITE BAY, Calif. — A new Italian restaurant is opening in Granite Bay, Thursday.

Sette Pasta House officially opened June 20, according to chef and owner Paul Jansen. Italian for seven, the restaurant's namesake comes from the number of main dishes on the menu.

"I have a firm belief that complexity in a restaurant kills consistency and that's why a lot of my concepts are efficient and pretty, pretty easy to run generally speaking. So I couldn't help but think that the mediocrity came from just having pages and pages of these menu items," Jansen said.

So, he took a different route, offering five pasta dishes and two main entrees. The menu will feature Bolognese Lasagna, Buccatini Carbonara, Casarecci with Basil, Spaghetti Pomodoro, Seasonal Ravioli, a Grilled King Salmon and a Grilled Filet Mignon. The two entrees will rotate.

Besides the excitement surrounding the opening, there have also been questions about possible service charges.

A post on Reddit garnered a lot of attention this week with hundreds of people commenting after someone posted a photo of a menu at Sette Pasta House with a line at the bottom reading "A 20% service charge is applied to the check, which ensures a fair wage and benefits for our team."

Jansen said the photo was taken from a soft opening where friends, family and other business owners were invited to try the food, which was complimentary. He said Sette will have a traditional tipping structure with no service fees.

"The soft opens went amazingly well, and we can’t wait to serve the local people some delicious homemade pasta," Jansen told ABC10.

Jansen said while he is focusing on seven dishes, there's still room for people to customize their orders by adding protein like grilled chicken breast, pancetta, meatballs or grilled salmon.

The pasta will be homemade. Jansen said they will also offer gluten-free pasta, but it won't be made in-house.

"I just love Italian food. It's warm, it's comforting, it's simplistic, right? I would say it's simplistic in its ingredients and everything — it's simple but not easy, right? If you look at it, and anybody would look at a recipe being like, 'wow, this is pretty basic to do,' but it takes a little bit of art in there to really make sure it comes out great," Jansen said.

The atmosphere of the restaurant will reflect the dedication to fresh ingredients with an open-style kitchen where guests can see him and the chefs cooking, according to Jansen. He said the idea is they'll be making fresh pasta for the next day, so people will be able to see the process.

Jansen said at the end of the day, it comes down to the experience and it's going to be a casual place but retain high-quality service contributing to the atmosphere.
