FOLSOM, Calif. — Cantina Pedregal, a Mexican restaurant serving a menu curated by two Michelin-rated chefs, hosted its grand opening Monday in Folsom.
Located at 185 Placerville Road, Suite 150, Cantina Pedregal offers a menu created by Patricio Wise of Roseville's Nixtaco and Brad Cecchi of Canon | East Sacramento. Nixtaco earned Michelin Bib Gourmand status in 2021; Canon earned it in 2019.
Folsom’s newest restaurant is open 5-9 p.m. for dinner seven days a week, but there are plans to open for lunch in the near future, according to owner Clay Nutting.
“We are incredibly excited to join the Folsom community,” Nutting said. “We have received such a warm welcome from Folsom residents on social media, from the local business community and we have even had people stopping by the restaurant to tell us how excited they are for us to open.”
Nutting said they are happy to finally show the masses what they’ve been cooking.
The menu is largely inspired by the flavors and cuisine of Northeastern Mexico, where Wise is from. Food is served family style with a wide variety of small plates, salads and shareable dishes.
“Some of the signature dishes include the Tlacoyo de Pulpo, which is grilled octopus and pork belly on a house-made, thick masa tortilla, called a Tlacoyo,” he said. “Another would be the Ensalada Caesar, which is served warm with grilled romaine, dry jack cheese, caesar dressing, served with a side of tortillas and is meant to (be enjoyed) like a taco.”
The restaurant also offers Cabrito en Salsa, or braised goat, a signature of Northeastern Mexico, served with tortillas, Nutting said.
Most of the staff came from the Folsom community, he said. The restaurant employs roughly 40 people, and their roles run the gamut of servers, bartenders, and kitchen and support staff, he said.
Cantina Pedregal was slated to open in January, but opening day was pushed back once owners decided to build a covered outdoor patio, ABC10 previously reported.
