Placerville BBQ spot praised by locals after gaining national recognition

Hog Wild Bar-B-Que on Main Street made it onto Yelp's 2024 list of Top 100 Barbecue Spots and also appeared on Food Network.

PLACERVILLE, Calif. — Hog Wild Bar-B-Que on Main Street made it onto Yelp's 2024 list of Top 100 Barbecue Spots and also appeared on Food Network for their Texas-style barbecue.

The customers can't rave enough about their smoked meats. 

"Oh, I think it's great," said Ann Metherd. "I'm originally from Texas and so barbecue's kind of my thing."

Open since 2010, the family-owned business is known for their brisket.

"The brisket today is as good as, I think, as good as we've ever had," Eddie Metherd said.

To get the meat looking good, the day starts early for staff at Hog Wild.

"My earliest pit master is on at 5 o'clock in the morning to get those briskets on, to get the ribs on, chicken," said owner Mary Fulmer.

Their brisket is cooked low and slow for 16 hours on a wood smoker.

"Our brisket, when you see it, it has a beautiful layer of bark and a layer of fat, so that perfect piece is a combination of all of that," Fulmer said.

The restaurant's signature dish, called the Angry Pit Master, puts their brisket in the spotlight. The sandwich is piled high with chopped brisket and pulled pork, then topped with cheese, jalapenos, house-made coleslaw and grilled onions.

Everyone has their favorite item on the menu from ribs to chicken, but no matter the meat you choose, their motto:

"We serve our meat naked....sauces on the side," Fulmer said. "The meat should really be so good that you don't need sauce. Although, sauce is amazing, we have three different sauces: our original, our spicy and our chipotle."

The restaurant is getting national recognition. Hog Wild was recently featured on Guy Fieri's Show 'Best Bite in Town,' launched this year on Food Network. They scored a place in the top three.

"We were thrilled to be part a part of the show. It was a great opportunity to showcase what the team does here and the amazing food scene here in Placerville," Fulmer said.

The restaurant also made it onto Yelp's list of Top 100 Barbecue Spots for 2024.

"It's not done like this anywhere else," Placerville resident Daniel Ocampo said.

He and his wife Nicole made Hog Wild part of their big day.

"They catered our wedding. We fell in love with the food," Nicole said.
